Clean Out the ‘Fridge Frittata

If you are person who does not consider yourself a visual artist, don't worry! Creativity is not only used in visual art, but so many other areas. Singing, dancing, project management, strategic planning, interior design, architecture, the list goes on and on. Cooking is one place where creativity can engage the visual side, which is what I lean to, while also utilizing more scientific skills.

Typically, my patience seems to run out more quickly in cooking than it does art, so I typically find myself leaning towards visual art and DIY projects. However, because I love to eat, one of the joys of quarantine this year has been discovering more patience and use of creativity in the kitchen. Therefore, this week's #makeitmonday is my favorite "clean out the fridge" frittata recipe, in case you're looking for an easy, yet colorful, breakfast dish. I have also included the text recipe below the video for easy reference.

"Clean out the Fridge" Frittata Recipe

  • 5-6 eggs Your choice of meat: 4-5 slices bacon, breakfast sausage, or chorizo (can be made vegetarian without this)

  • Splash of heavy whipping cream

  • 2 Tbs. cojita or parmesean cheese

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon turmeric

  • 1/2 cup onions, diced

  • 1/4 cupe red, orange and/or yellow peppers, diced

  • 1/4 cup poblano peppers, diced

  • 3/4 cup shredded carrots

  • 2 tbs goat cheese

  • 3/4 cup chopped cherry tomatoes

  • 6 basil leaves

  • handful of shredded cheese, I used colby jack, but any flavor would work

  • optional add-ins: 3 handfuls of spinach, 1 cup chopped mushrooms

1. Heat oven to 350 degrees Fahrenheit.

2. Heat cast iron skillet to a medium heat.

3. Cook meat and scoop excess grease if needed.

4. In medium bowl, crack 5-6 eggs, add splash of heavy whipping cream, cojita or parmesean cheese, salt, pepper, and turmeric. Whisk to combine. Set aside.

5. Add onions & peppers to skillet and saute.

6. Add carrots, saute for 2-3 more minutes

7. Lower temperature of skillet to low. Add in egg mixture.

8. Crumble goat cheese and sprinkle around skillet.

9. Add on tomatoes, basil leaves, and cover with shredded cheese.

10. Bake for 12-15 minutes, until edges start pulling away from the sides of the skillet.
